Lassi and Buttermilk Production — From Reception to Packing
A lassi and buttermilk plant runs as a culture-and-blend line: milk is received, standardised, pasteurised and homogenised, cultured or curd-based, blended with sugar, fruit or spices, then cooled and filled under hygienic, cold-chain-ready conditions.
01. Milk Reception
Raw milk arrives by road tanker, is weighed, sampled and chilled to 4 degrees C in insulated silos before processing.
06. Pasteurization
The standardised mix is pasteurised at 90 to 95 degrees C — the high heat-treatment cultured dairy drinks need for body and shelf life.
02. Quality Testing & Standardization
Fat, SNF, acidity and adulterants are tested; the milk is standardised to the fat and SNF the target beverage requires.
07. Homogenization
The mix is homogenised at 150 to 200 bar to give lassi and buttermilk a smooth, stable, non-separating texture.
03. Clarification & Chilling
Milk is clarified to remove sediment and somatic cells, then chilled and held ready for the culturing or blending base.
08. Culturing and Fermentation
The cooled mix is inoculated with selected lactic cultures and incubated at around 42 degrees C until target acidity and flavour develop; sweet lassi can instead be built on a fresh curd base.
04. Cream Separation
A high-speed centrifugal separator sets the fat level — lean for chaas and buttermilk, richer for sweet lassi.
05. Standardization
Skim and cream are re-blended to the exact fat and SNF target for the beverage — lean for chaas, richer for lassi — before heat treatment.
09. Blending and Flavouring
The cultured base is blended with sugar syrup, fruit pulp, or salt and spices — sweet, mango, plain or masala — to recipe, then chilled.
10. Dispatch / Packing Feed
Finished beverage cooled and filled into pouches, PET bottles or cups — ready for chilled dispatch and modern-trade or institutional supply.

A compact pouch-chaas line starts in the low crores; high-speed multi-SKU lassi and buttermilk lines with PET and cup filling run higher.
