01. Milk Reception
Fresh milk received, weighed, and tested for fat, SNF, and quality. Chilled and held until the curd batch begins.
06. Culture Inoculation
Selected starter cultures (S. thermophilus, L. bulgaricus, or dahi cultures) dosed for consistent acidity and flavour.
02. Standardisation
Milk standardised to target fat/SNF — often fortified with SMP for the firm body that set curd and yogurt require.
07. Cup Filling
For set curd, inoculated milk is filled into cups or pouches before setting; stirred yogurt is incubated in tank first.
03. Pasteurisation
Milk pasteurised at 85–90°C — hotter and longer than drinking milk — to denature whey proteins for a firm, stable set.
08. Incubation
Held at 42–45°C for 4–6 hours until target acidity (pH ~4.5) and a firm set develop.
04. Homogenisation
Homogenised at 150–200 bar to prevent wheying-off and deliver a smooth, uniform curd texture.
05. Cooling
Cooled to the inoculation temperature of 42–45°C — the optimal range for the yogurt and dahi starter cultures.
09. Blast Cooling
Rapidly cooled to 4°C to arrest fermentation, locking texture, acidity, and shelf life.
10. Cold Storage & Dispatch
Packed curd / yogurt moved to cold storage and dispatched under cold chain. CIP cycle starts for the next batch.
