Whey Processing — From Whey to WPC and Lactose
A whey processing plant runs as a membrane-and-dry line: whey is clarified and pasteurised, concentrated by ultrafiltration to raise protein, optionally diafiltered, then evaporated and spray-dried into WPC powder, while the permeate is processed for lactose.

01. Whey Reception
Whey from cheese, paneer or casein production is collected, weighed and chilled, then screened to remove curd fines.
06. Evaporation
The retentate is concentrated by reverse osmosis or a vacuum evaporator to raise total solids before drying.
02. Clarification
Whey is clarified by centrifuge to remove residual fat and fine curd particles before membrane processing.
07. Spray Drying
Concentrate is atomised into hot air in the spray dryer, instantly removing moisture to form whey protein powder.
03. Pasteurisation
Clarified whey is pasteurised at around 72 degrees C and cooled to protect the membranes and ensure food safety.
08. Fluid-Bed Drying
Powder is dried and cooled on a vibro fluid-bed, building free-flowing, low-moisture WPC.
04. Ultrafiltration (UF)
Ultrafiltration membranes concentrate the whey, retaining protein as retentate while lactose and minerals pass into the permeate.
05. Standardization
The protein retentate is standardised to the target grade — WPC 35, 60 or 80 — before concentration and drying.
09. Sifting and Packing
Powder is sifted and packed into bags or tins with nitrogen flush and metal detection.
10. Dispatch / Packing Feed
WPC is packed and dispatched; the lactose-rich permeate is crystallised and dried for lactose recovery.

Capex varies with capacity, target product (WPC grade, lactose) and membrane area. A compact UF-only line starts modestly; full WPC-plus-lactose plants with evaporation and spray drying run into tens of crores. ATMAN sizes membranes, evaporation and drying to your whey volume and product to avoid over-capitalising.
Typically 8 to 14 months from design freeze to commissioning, depending on capacity, membrane and drying scope, and civil readiness. ATMAN runs design, fabrication and civil in parallel to compress the schedule.
Start by recovering whey from your existing cheese or paneer output, sizing UF to that volume, with headroom to add evaporation, drying and lactose recovery as demand grows.
Mandatory: FSSAI licence (central or state by turnover), GPCB / state pollution-board consent, municipal NOC, factory licence, fire NOC, and electricity sanction.
