01. Milk Reception
Milk and cream received, weighed, and tested. Chilled and held as the base for the ice cream mix.
06. Flavouring
Flavours, colours, and inclusions (fruit, nuts, chocolate) metered into the aged mix before freezing.
02. Mix Preparation
Milk, cream, sugar, SMP, and stabiliser/emulsifier blended to the target mix recipe in a mix tank.
07. Freezing
Continuous freezer freezes the mix to about –5°C while whipping in air (overrun) for light, smooth ice cream.
03. Pasteurisation
Mix pasteurised at 80–85°C to ensure safety and fully dissolve ingredients for a smooth base.
08. Filling & Moulding
Soft-frozen ice cream filled into cups, cones, bars, or tubs; inclusions and ripples added inline.
04. Homogenisation
Mix homogenised at 150–200 bar to disperse fat finely, giving a creamy, stable texture.
05. Ageing
Mix aged at 4°C for 4–24 hours so the fat crystallises and stabilisers hydrate — key for smoothness and overrun.
09. Hardening
Filled product blast-hardened at –30 to –40°C to lock structure and prevent ice-crystal growth.
10. Cold Storage
Hardened ice cream stored at –25°C and dispatched under frozen cold chain. CIP starts for the next batch.

A compact batch-freezer line can start in the low-to-mid tens of lakhs; a continuous-freezer line with automated filling and a hardening tunnel runs higher.
