Mozzarella Production — From Milk to Stretched Curd
A mozzarella plant runs as a pasta-filata line: milk is standardised, pasteurised, cultured and acidified, set with rennet, then the curd is cut, cooked, drained, stretched in hot water, and moulded, brined and packed.
01. Milk Reception
Raw milk arrives by road tanker, is weighed, sampled and chilled to 4 degrees C in insulated silos before processing.
06. Pasteurization
Standardised milk is pasteurised at around 72 degrees C for 15 seconds, then cooled to the culturing temperature.
02. Quality Testing & Standardization
Fat, protein and casein are tested; milk is standardised to the casein-to-fat ratio mozzarella yield and stretch depend on.
07. Culture and Acidification
Thermophilic starter culture is added and the milk is held to acidify toward pH 5.2 — the acidity window that lets the curd stretch cleanly.
03. Clarification & Chilling
Milk is clarified to remove sediment, then chilled and held ready for standardisation.
08. Rennet Set, Cut and Cook
Rennet is added to coagulate the milk into a firm gel; the curd is then cut, healed and cooked (scalded) to expel whey and build texture.
04. Cream Separation
A centrifugal separator sets the fat to hit the precise casein-to-fat ratio mozzarella requires.
05. Standardization
Skim and cream are re-blended to the exact casein-to-fat ratio before culturing — the lever for yield and melt.
09. Stretching and Moulding
Drained curd is cheddared, then stretched and kneaded in hot water at 70 to 80 degrees C — the pasta-filata step — and moulded into balls, blocks or pizza loaves.
10. Dispatch / Packing Feed
