How Spray Drying Works

Concentrated milk is atomized into a hot-air chamber where water evaporates in seconds, leaving powder particles that are separated in cyclones and fluid beds. Controlled inlet/outlet temperatures and atomization decide particle size, bulk density, moisture and solubility — the quality parameters buyers pay for.
