What the Machines Do

A falling-film evaporator concentrates whey to high total solids energy-efficiently; the spray dryer then atomises the concentrate into hot air to produce whey powder at target moisture. They govern three commercial outcomes: powder moisture and solubility (which set quality and shelf-life), particle size and flowability (which drive handling and packing), and energy per kg (the biggest running cost).
