Mawa / Khoa Production β From Milk to Desiccated Solids
A mawa / khoa plant runs as a continuous desiccation line: standardised milk is pre-heated, then boiled and continuously scraped in a khoa machine until it concentrates to khoa, which is worked for grain, cooled, moulded and packed.
01. Milk Reception
Raw milk arrives by road tanker, is weighed, sampled and chilled to 4 degrees C in insulated silos before processing.
06. Pasteurization
Milk is pasteurised and pre-heated to around 85 to 90 degrees C before entering the khoa machine.
02. Quality Testing & Standardization
Fat and SNF are tested and standardised; khoa is fat-rich, so standardisation sets the richness and yield.
07. Continuous Boiling
Milk is continuously boiled in the khoa machine β scraped-surface or inclined-pan β evaporating water rapidly while constant scraping prevents scorching.
03. Clarification & Chilling
Milk is clarified and pre-heated, ready to feed the khoa machine.
08. Desiccation and Graining
Concentration continues to around 65 to 70 percent total solids; mechanical working develops the characteristic grain and body of good khoa.
04. Cream Separation
A separator sets the fat to the rich ratio khoa needs for body and grain.
05. Standardization
Skim and cream are re-blended to the fat-rich target khoa requires before desiccation.
