Ice Cream Ageing Vat
The ageing vat is where ice cream mix becomes ready to freeze well. After pasteurization and homogenization, the mix is cooled and held in a jacketed ageing vat at around 4Β°C with slow agitation for several hours β maturing the fat, hydrating stabilizers and improving whippability. Skip or under-size this stage and texture, creaminess and overrun all suffer. ATMAN designs and integrates ageing vats as a properly sized part of your turnkey ice cream line.

Why Ageing Matters
Ageing (typically 4β24 hours at ~4Β°C) lets fat globules crystallize and proteins/stabilizers hydrate. The result is a smoother, creamier product with better overrun and melt resistance in the freezer. Correct vat volume and controlled cooling are what make consistent quality possible at scale.
